Testimonials
For lovers of craft beers, not to be missed
Sombom, July 2023“A very enjoyable trip to McGilĺs brewery outside Waterville. Joe went into great detail explaining the brewing process for each of the beers produced and also the stories behind the names of the beers. Generous samples of beers were offered along with recommendations of places to visit in the area. Great to see a local brewery producing good quality beers.”
Top notch micro brewery!
Pat Coady, August 2022“What a great place to visit. Joe and his family have put their hearts and souls into this endeavour. His enthusiasm and energy are plain to see from the minute you meet him at the door of the brewery. An added bonus is the quality of the beers. All gorgeous but my favourite is the Maude Delap red ale. I’d recommend a visit here to anyone who’s in the area. If you’re a beer drinker you won’t be disappointed.”
You’ll have craic!
Eamonn Boland, August 2024“Joe and Mags had a warm welcome for us, fielded a lot of questions and answered with craic. We were a pre booked stag and they handled us with gusto. Beers were good, it’s a small location, ask questions and you’ll have craic.”

Fantastic experience
Rajesh Nair, 2021“The brewer Joe loves the art of brewing and it shows. Ales and beers with stories attached and relevant to the spectacular ring of Kerry. This brewery is very likely the smallest commercial craft brewery in Ireland. I have tasted spirits, wine, beer, ales and all kind of alcoholic beverages all over the world and trust me you won’t be disappointed if you visit Joe’s brewery.”
Great tour and tasty beer!
Kate, September 2020“Joe gave us a great insight into how beer and stout is made in a really fun way. Would definitely recommend a stop here on the Ring of Kerry!”

Follow your dream!
PaulC, July 2020“Great experience for groups, stag and hen parties. Joe is a great host and brewing is his passion. He is full of stories and anecdotes that make a visit a memorable experience. You can’t help admire Joe for following his dream and giving up a career in investment banking to open a brewery in beautiful Waterville. You will want to bring back a few bottles of their great beer so you can relive the experience. Don’t miss it!”
Must do in Ring of Kerry
malt-n-taste, October 2019“We had a very interesting time together with Joe, the owner and heart of McGill‘s. We tasted the latest Skellig Monk Blonde and the Dark Sky Reserve Stout. You really taste that both are made with heart and a lot of true craftsmanship. Joe, all the best for the future and keep on the good work and continue with your enthusiasm and explorer mindset! Hope to come back or taste your products in the near future!”
Great micro brewery
Andrew, September 2019“Joe, you were an awesome host to my friend and I! I seriously could have stayed and talked to you for another hour! First, this place is a micro brewery, but between Joes intro video, his beer, and himself, it makes stopping worth it if you’re in Kerry or doing the Ring of Kerry. I’ve done a few Brewery tours, but because how small it is, it felt personal and more in touch then the bigger tours like Guinness…”

Known for her groundbreaking work in the early 1900s, she was the first person to successfully breed jellyfish in captivity, revolutionising the study of marine life.
Despite lacking formal training, Delap’s dedication and passion for marine research led her to contribute valuable insights to the scientific community. She meticulously studied the diverse marine species around Ireland’s coast, becoming a respected figure in biology circles. Her research remains influential to this day.
At McGill’s Brewery, we honor her legacy with our Maude Delap Irish Red Ale, a brew that reflects her tenacity and deep connection to Ireland’s natural beauty. Just as Maude explored the unknown depths of the sea, we aim to craft beers that explore bold flavors and tradition.
Cheers to Maude Delap – an Irish legend who paved the way for future generations of scientists!
